Whats the difference between 5.1 and 7.1 surround?

i have a room, like 300 sq.ft...... i would like a home theater system for my room..... I listen to a lot of music.... I watch HD movies too..... Budget doesn't matter...... But reaaly whats the difference and how does it change the experience..... But i live in an appartment.....
